Bread, Pizza, or Rolls Recipe




3 C flour*

1 T Vital Wheat Gluten (Hodgson Mill)

1T Organic Cane Sugar

Pinch Sea Salt (Eden French Celtic Sea Salt)

1 egg

¼ C Canola Oil

1 ¼ – 1 ½ C Warm Water (105 – 110 degrees F)

2 tsp SAF-Instant Yeast




Place ingredients in the order listed above in mixer bowl. Begin mixing on about a “2” once ball begins to form increase to “5” and then once all ingredients are off sides and ball is a good form, turn all the way up “10” and mix for a good 5-6 minutes (can mix up to 10-15 minutes).


Grease a good sized mixing bowl and bring a small pot of water to boil. Place dough ball in mixing bowl and flip so that it is nice and greased on both sides. Now place bowl in a COLD oven with pot of boiling water. The steam from the pot of water will help the dough to stay moist and rise better. Set timer for ONE hour.


If Pizza Dough: Then work dough a bit to work out gas bubbles and then shape like a very-thick rope. Cut dough in half and then keep cutting halves until you have about 16 pieces.


Roll out the 16 pieces of dough into a mini pizza crust shape. Top with sauce and cheese and bake as you would a mini pizza.


You can also shape the pieces, bake for about 3-4 minutes, cool and store in fridge or freezer to top at a later time.


If Bread: Work dough a bit to work out gas bubbles and then shape into a “log” and place in a WELL-greased bread pan. Boil another pot of water and place bread pans and pot of water in COLD oven. Set timer for another hour. This can make one large loaf of bread or two average sized loaves of bread.


Remove from oven. Turn oven to 350 degrees and allow oven to preheat. Once oven is preheated, place bread in oven and bake for approx. 1 hour


Cool loaves for 15-20 minutes, remove from bread pans and cool on a rack, completely before storing in bags.


** Flour Note: If using wheat, then use the larger water amount. I have not tried this recipe using full wheat flour but it does work well with half and half. Use unbleached organic all-purpose white flour with the whole wheat bread flour.


** Pizza dough: You can up the vital wheat gluten to 2 Tbsp for a chewier crust. You can also use a good olive oil in place of the canola oil for pizza crust but not for bread.

** Yeast Rolls: Use King Arthur White Wheat flour and after cutting into pieces, like the pizza dough instructions, roll the pieces into smooth balls and place in round cake pans. Allow to rise in COLD oven for 1 hour with pot of boiling water, then bake at 350 degrees for about 30 minutes. Be sure to grease the cake pans really well! When finished baking and before removing from cake pans, brush with real butter then immediately remove and place in towels. This helps them to “steam” a bit and softens the crust. =)
